We use the PDF Embed solely on a mobile website. The Zoom Button (and Page Number) is too large and not required on a mobile as there are much easier ways to zoom on a mobile.
I see how useful it would be to have an option to remove Zoom button, especially for mobiles. We will try our best to consider this feature for our future updates.
