Due to the products we sell being restricted to over 18s, having hours as an option as opposed to the minimum being 0 or 1 day, would allow our customers to browse our site and place an order without having to repeat age verification but would also help to ensure nobody underage can use someone else's account who has already verified their age to access our site. We had this set to '0' however it seems to be frustrating our customers so having an option to select a certain number of hours may help avoid this.

I set this to 0.084 as suggested expecting it to remember me for 2 hours,
however I don't believe this is working correctly.
When I was in customize mode in my store the age verification box kept
popping up every 20/30 seconds, and when I was viewing my store it popped
up every time I swapped between pages and moved back to my home page.
Apologies I'm still learning how all this stuff works, but can you confirm
the remember function does this apply to everyone such as people simply
browsing our site, or does this only apply to registered and logged in
users?
If you could look into this and offer any advice it would be appreciated.

I appreciate development like this will take time.
So based on your example if we set this to 0.084 would this mean the
remember visitor would work for 2 hours?
I believe that would be enough time to achieve what we require.
Do you have any guidance on how we would do this as I thought the app only
allows us to select from the drop down menu I wasn't aware we could alter
this ourselves.

I'd love to say that at the moment, our Age Verification app works the following way: any number you insert to this setting gets multiplied by 86400 (seconds). Thus, you can recalculate the needed initial number to get the result you need.
For instance, a value of 0.042 roughly equals one hour.
